Easter Cupcakes With a Surprise Bunny Inside

Ingredients

Strawberry Frosting Ingredients
    • 1 cup unsalted butter, room temperature
    • 16 ounces cream cheese, room temperature
    • 2 cups powdered sugar
    • 2 tablespoons freeze-dried strawberries, finely ground in a food processor
    • 1/4 teaspoon salt
Cake Mixture Ingredients
    • 1 baked Ultimate Vanilla Cupcake (follow Ultimate Vanilla Cupcake instructions, but just bake a single cupcake – reserve the rest of the batter for the bunny cupcakes)
    • 2 teaspoons strawberry frosting from above
    • freeze-dried strawberries ground in a food processor as needed (up to 1/2 ounce)
Bunny Cake Ingredients
  • Cake batter reserved from the cake mixture above

Instructions

Frosting Instructions
    1. In a medium-sized mixing bowl, mix butter and cream cheese until light and fluffy (about three minutes at high speed).
    2. Mix in powdered sugar a little at a time.
    3. Mix in strawberry powder and salt.
Cake Mixture Instructions
    1. Remove cupcake from the liner and break into crumbs.
    2. Mix crumbs with 2 teaspoons of the frosting until it forms a Play-Doh-like consistency.
    3. Mix in the strawberry powder until the cake mixture becomes a color that you like.
Bunny Cupcake Instructions
  1. Preheat oven to 350 F.
  2. Fill cupcake liners 1/3 full with Ultimate Vanilla Cupcake batter. There should still be some batter left over.
  3. Rip off pieces of the cake mixture and sculpt into the shape illustrated in this post – a small ball with a bowl on top that is just big enough to rise slightly above the batter.
  4. Place the ball/bowl shape in the center of each filled cupcake liner.
  5. Fill each bowl with a small dollop of batter.
  6. Bake for 20 minutes or until the cupcakes bounce back when lightly touched. The cupcake batter should have risen enough to completely hide the bunnies.
  7. Remove cupcakes from the tin and set on the counter to cool.
  8. Pipe strawberry frosting onto cooled cupcakes.
  9. Serve with a knife and instructions to cut each cupcake open down the center. If people just bite quickly into the cupcakes, they will miss the surprise!

Notes

I highly recommend that you do one or two test cupcakes to get the knack of this before baking all of the batter. It can take some tweaking to make the bunny the perfect size and to get the batter to rise just the right amount.

How to Host a Cupcake Party

Rather than spending lots of time creating wow-worthy cupcakes to serve at your next party, consider letting your guests do the decorating. Serving your cupcakes unfrosted is not only a ton less work for you, but your guests will love getting to decorate their own. You might also consider making mini-sized cupcakes so that people can decorate and eat several cupcakes without feeling too guilty.

To host a cupcake party, you’ll need:

  1. Cupcakes (to make it really easy on yourself, you can make vanilla and chocolate cupcakes using the same recipe).
  2. A cupcake stand. I was recently sent a cupcake stacker stand to review and I love it – more on that later.
  3. Frosting (as many kinds as you feel like).
  4. Toppings (sprinkles, chocolate chips, nuts, etc.)

It’s been a few months, but I am again participating in Taste & Create. Taste & Create is a food blogger event where you get randomly matched with another food blogger to try out their recipes and ideas. I got the idea for the cupcake party from my partner this month, Katie at One Little Corner of the World. Coincidentally, Katie lives in St. Louis and I met her at a FoodBuzz dinner.

Katie posted about a fabulous taco bar party that she hosted and I decided to take the same concept and use it with cupcakes. I hope she doesn’t mind that I didn’t use one of her exact recipes – I took the “Create” part of Taste & Create very seriously. I did make sour cream frosting (shown in the center of the photo above) to keep with the spirit of her meal.

In addition to the sour cream frosting, my cupcake party featured two kinds of sprinkles, chocolate chips, and Skor chips (toffee chips).

Cupcake Stacker

The great thing about them is that when it’s time to eat the cupcakes, people simply remove a cupcake stacker from the pyramid. The single cupcake stacker can then act as a little cupcake bowl to contain crumbs while people are eating.

Of course, you don’t have to just use the cupcake stacker for cupcakes. You could use them for condiments, snacks, or candy.

Classic cupcakes

Ingredients

  • 2 cups self-raising flour, sifted
  • 3/4 cup caster sugar
  • 3/4 cup milk
  • 125g butter, melted, cooled
  • 2 x 59g eggs, beaten
  • 1 teaspoon Queen Natural Vanilla Essence
  • Sprinkles and lollies, to decorate

Icing

  • 1 1/2 cups pure icing sugar
  • Pink food colouring, optional
  • 1 to 1 1/2 tablespoons water

Method

  1. step 1 : Preheat oven to 200°C. Grease a 12 x 1/3-cup capacity muffin pan. Alternatively, line holes with paper cases. Combine flour and caster sugar in a bowl. Make a well in the centre.

  2. Step 2

    Add milk, butter, eggs and vanilla to flour mixture. Using a large metal spoon, stir gently to combine.

  3. Step 3

    Spoon mixture into prepared muffin pan. Bake for 12 to 15 minutes, or until a skewer inserted into the centre comes out clean. Stand in pan for 5 minutes before transferring to a wire rack to cool.

  4. Step 4

    Make icing: Sift icing sugar into a bowl. Add food colouring and water. Stir until smooth and well combined. Spoon icing over cupcakes. Decorate with sprinkles and lollies.

We feel like we’ve been going in circles lately.

Maybe that’s because we’ve given ourselves a challenge to see what we could come up with using a SIMPLE ROUND CAKE.

No special shapes. No complicated techniques. The whole idea was: FAST AND EASY!!!

For our first round project, we began with a ten-inch tart shell straight from the grocery store. We filled the shell with lemon pudding

Then we built our candy surface, creating the SMILE FIRST, using black Sixlets.

Then we added yellow Sixlets in rows above and below–except for the eyes, where again we used black Sixlets.

Finally we put yellow gumballs all around the perimeter.

Hopefully, those super-easy directions–and the final result–will bring a big smile to your face!

Cupcake truyền thống ( Fairy Cake )

CNMN – Món bánh Fairy Cake xuất hiện tại Anh từ thế kỷ 18 và ngay sau đó trở thành món tráng miệng được yêu thích trong các buổi tiệc trà. Đây chính là tiền thân của cupcake ngày nay, một trong những món bánh được nhiều người biết đến nhất thế giới.
Nguyên liệu: 
Phần bánh

  • 110g bơ để ở nhiệt độ phòng, cắt nhỏ
  • 110g đường trắng
  • 2 quả , dùng whisk đánh nhẹ cho tan đều
  • 1 teaspoon tinh chất vani
  • Vỏ 1 quả chanh vàng
  • 110g bột trộn sẵn bột nở (self-raising flour)
  • 1-2 tablespoon sữa tươi

Phần trang trí

  • 300g đường icing
  • 2 – 3 tablespoon nước lọc
  • 2 – 3 giọt màu thực phẩm
  • Đường màu trang trí bánh tùy theo sở thích
Các bước thực hiện: 
1. Bật lò nóng sẵn ở nhiệt độ 180 độ C. Lót 12 cup giấy vào khuôn cupcake.
Dùng máy đánh trứng đánh tan bơ với đường. Lưu ý chỉ nên đánh bơ với từng thìa đường một, khoảng 30 giây thì thêm thìa mới. Điều này sẽ giúp bơ được đánh thật nhuyễn, giúp bánh bông xốp hơn.
2. Sau khi đánh hết đường, tiếp tục lặp lại bổ sung từng thìa trứng đã đánh tan vào hỗn hợp bơ. Tiếp đến, cho thêm tinh chất vani và vỏ chanh, trộn đều.
Rây bột vào hỗn hợp bơ, sử dụng phới mềm (spatula) trộn đều bột theo hướng từ dưới lên trên. Thêm 1–2 tablespoon sữa cho đến khi hỗn hợp đủ độ lỏng để chảy xuống khi nhấc spatula lên. Dùng thìa hoặc túi bắt kem bơm bột vào cup giấy chuẩn bị sẵn. Định lượng bột khoảng 1/2 chiều cao cup giấy.
3. Nướng bánh trong vòng 8–10 phút đến khi mặt bánh chuyển sang màu vàng nâu. Để nguội trong khuôn khoảng 10 phút rồi chuyển sang giá làm mát để tránh hấp hơi.
4. Chuẩn bị phần icing trang trí bánh bằng cách trộn đều tất cả nguyên liệu với nhau trong một tô lớn, thêmmàu thực phẩm theo ý thích. Dùng thìa rưới đường icing lên mặt bánh đã nguội hoàn toàn rồi trang trí thêm bằng các hạt đường màu.

110g butter to room temperature , chopped
110g white sugar

Ready-mixed flour baking powder 110g ( self – raising flour )
1-2 tablespoon milk
Decoration

300g icing sugar
2-3 tablespoon water
2-3 drops of food coloring
Sugar cake decorating color preference
The steps are :
1 . Preheat the oven to preheat temperature of 180 degrees C. Lot 12 on the paper cup cupcake molds .

Using electric mixer beat butter with sugar dissolved . Note should beat butter with sugar a tablespoon each , about 30 seconds , then add a new spoon . This will help beat the butter is very fine , fluffy cake more help .

2 . After hitting off the road , continue to repeat each additional tablespoon beaten egg to the mixture melted butter . Next, add the vanilla extract and lemon zest , mix well .

Sift the flour into the butter mixture , using soft MOT ( spatula ) powder mix from the bottom up . Add 1-2 tablespoon milk until mixture fluid enough to flow down the spatula when lifted up . Use a spoon or ice cream bag caught pump cup batter into prepared paper . Quantification of flour about 1/2 cup paper height .

3 . Bake for 8-10 minutes until the cake turns golden brown . Allow to cool in the mold for 10 minutes, then transfer to a cooling rack to prevent steaming .

4 . Prepare cake decorating icing part by mixing all the ingredients together in a large bowl , food themmau liking . Use a spoon sprinkle icing sugar over the cake has cooled completely , then decorate with colored sugar granules .
